A Perfect Sunday Morning Starts With Coconut-Date Coffee

There’s nothing more luxurious than a Sunday morning coffee sipped on an outdoor patio or in the garden with friends. But sometimes the summer heat makes us want something a little less hot and a little more refreshing, without us having to give up our vice-grip reliance on caffeine.

This easy, healthy coffee DIY packs the punch of a morning cappuccino with the smooth, refreshing texture of a smoothie. Oats, dates, and cold-pressed coconut oil give this Coconut-Date Mocha drink a forgiving texture, which means it will be easy to sneak superfood supplements like ashwagandha or reishi into the mix for an added nutritional boost (for those who want it).

This recipe was excerpted from Freniel and Vindahl’s Green Kitchen Smoothies: Healthy and Colorful Smoothies For Every Day cookbook, which we love here at GC. Check out our (slight) modifications above. Dates are nature’s best natural energy source, so we love the idea of incorporating them into our morning coffee for added energy. Relish this drink and relax– you might even consider listening to GC’s Coffee Shop playlist while you’re at it.

Happy Sunday!
