1 1/2 cup mustard greens
3/4 cups of peanuts (salted and roasted)
1/2 cup of scallions (chopped)
1/3 cup of red onions (minced or sliced)
2 cloves of garlic (whole)
2/3 cup of olive oil
1 teaspoon red chili flakes
2 teaspoons of lemon juice
Salt to taste
In medium skillet, over medium heat, add 7 tablespoons of olive oil, the peanuts, garlic, scallions, and red onions. Saute until the onions and the scallions are translucent and the peanuts are slightly golden brown.
In a blender, add the mustard greens, the olive oil, the sautéed peanuts, scallions, onions, lemons juice, chili flakes, and blend until desired consistency. Add salt to taste.
Recipe yields one cup.
