Sunflower Seed Brittle Is a High-Nutrient Twist on The Classic

Sunflower seeds are one of the world’s healthiest foods, rich in vitamin E, vitamins B6 and B1, copper, manganese, niacin, thiamine, phosphorus, selenium, and several other key nutrients. As an essential source of omega 3 fatty acids and linoleic acid, sunflower seeds are an easy way to add fiber and healthy fats into your diet– but eating them is sometimes a chore (one can only eat so much trailmix, after all).

The GC Team is constantly trying to incorporate more sunflower seeds into our diets, so we fashioned this sunflower seed brittle as a new twist on classic peanut brittle. Revel in the nutrients and let your sweet tooth rejoice!

Sunflower Seed Brittle

Sunflower Seed Brittle

1 hour
Ingredients

3 cups sunflower seeds
2 cups date sugar
1 1/2 cups water
1/2 Tsp salt
2 Tbsp butter
1 Tsp vanilla
1/4 Tsp baking soda

Preparation
1.

Combine sugar, water and salt in a saucepan over medium/medium-high heat until it comes to a gentle boil. Set a timer for ten minutes.

Stirring occasionally, watch for the color to change from clear to a light amber color, about 15-20 minutes. Remove from heat as soon as the color changes.

 

3.

Stirring continuously, add butter, vanilla and baking soda. Continue stirring until the mixture starts to get glossy.

 

4.

Stir in the seeds and quickly turn out onto a well-greased cookie sheet. Spread and cool for 30 minutes or until brittle enough to crack. Enjoy!
