3 cups sunflower seeds
2 cups date sugar
1 1/2 cups water
1/2 Tsp salt
2 Tbsp butter
1 Tsp vanilla
1/4 Tsp baking soda
Combine sugar, water and salt in a saucepan over medium/medium-high heat until it comes to a gentle boil. Set a timer for ten minutes.
Stirring occasionally, watch for the color to change from clear to a light amber color, about 15-20 minutes. Remove from heat as soon as the color changes.
Stirring continuously, add butter, vanilla and baking soda. Continue stirring until the mixture starts to get glossy.
Stir in the seeds and quickly turn out onto a well-greased cookie sheet. Spread and cool for 30 minutes or until brittle enough to crack. Enjoy!
