Watermelons are one of the ultimate summertime snacks so it seems appropriate that today is officially known as National Watermelon Day. In honor of the occasion, we made a fresh watermelon feta salad, complemented by mint picked from our rooftop herb garden. The sweet, refreshing crunch of the watermelon is offset by the tang of the balsamic vinegar and the creaminess of the feta, while the mint adds just a hint of earthiness. The dish feels light and clean and is easy to make on a hot day. Preparation
Cut watermelon into slices, remove the rind and whites, and plate.
Sprinkle crumbled feta and mint over watermelon.
