Garden Collage Graphic Designer and resident food guru Eidia Moni Amin shares four easy, plant-based recipes for a delicious weekend brunch.
You eat with your eyes, so each of Eidia’s recipes uses a colorful element from the garden to make this plant-based brunch extra nutritious. Purple potatoes, red pepper, leafy green swiss chard, oranges, pears, sage, garlic, and a few of our other favorite nutrient-packed ingredients collide to make beautiful, colorful dishes perfect for the whole family.
Eidia’s Citrus Spritzer is a light, refreshing, non-alcoholic brunch drink full of vitamin C and antioxidants. Satsuma orange, clementine juice, and pink grapefruit juice combine with sparkling water to make a beautifully-colored drink perfect for adults and children alike. This easy-to-make frittata combines farm-fresh eggs and seasonal, local vegetables for a nutrient-packed protein dish that is a viable option for picky eaters.
